You can buy sauces at the store. You’ll probably find at least a dozen brands and flavors at your local grocery store. But nothing beats a good homemade barbecue sauce. If you want to create your own barbecue sauce, it isn’t hard. Just choose your base, and the rest of the flavors that you want, and start experimenting. A good barbecue sauce will have a balanced blend of flavors to it, sweet, sour, smoky, spicy. Just add a little bit of each ingredient at a time until you get the blend that you want. You can always add more, but you can’t take away, so just add a little bit at a time. Feel free to experiment with your sauce, people have added coffee, cola, cherries, and other ingredients that you wouldn’t think to find in a barbecue sauce. A quick note on storage. You can store the barbecue sauce in a sealed container in your refrigerator for a few days. If you want to keep the sauce longer than that, you’ll need to learn some canning techniques, to sterilize the food and containers, and properly process the sauce.

How you use the barbecue sauce depends a lot on the sauce itself. Most barbecue sauces can be used at the table as a dipping sauce for food. But different types of sauces are used differently in cooking. Thin sauces can be used as a marinade for the meat before grilling, and can also be applied during the cooking proces. Thicker sauces, especially those with a lot of sugar should not be applied to the food until the last few minutes of cooking time, or they could burn. If you are doing a true barbecue, however, cooking the meat slowly for a long time, you can get away with putting some of the sauce on the meat at the beginning of the cooking time, as the lower temperature would be less likely to burn the sauce.

Most gas grills are setup for propane.  To convert it to natural gas, (if you want natural gas) you are better off taking it to your local barbecue shop than doing it yourself.

You can purchase gas grills very reasonably.  But, be careful!  You don’t want it to fall apart after the first week.  The number one thing to look for is high temperature capabilities.  Better units reach 48,000 BTUs, or so.  You can buy a quality grill in the low three hundred price range.  Get a cover for it.  The grill will last you twice as long.

Ideally, you want to use natural charcoal. It’s quite different than what you get at your local grocery store, but you will find it in stores that specialize in organic foods.  Once you have experienced using natural charcoal you won’t use anything else.

Nothing spoils the thrill of barbecuing more than having to deal with trying to light charcoal.  Worse is trying to get it going with charcoal lighting fluid.  Next, is cleaning up and disposing of the ashes.

Along comes technology!  Now days, there are certain brands of charcoal grills that start the charcoal for you very easily through propane gas assistance.  And, then make it very easy for you to cleanup afterwards without getting the hands dirty.

Now with grills like these, barbecuing can be a joy and the cooking results will be fantastic.

Pellet grills have been around for a while, and are very easy to use.  Pellets especially manufactured for barbecuing are placed in a hopper and are feed to a small fire pit by means of an auger.  They come in all kinds of flavors.

It usually takes fifteen minutes, or so to get a pellet stove up to temperature.  Once you do, it is time to slow cook, and smoke whatever you are putting on the grill.

Pellet grills are, in a way, the best of all worlds.  Getting them started is very easy and the results are astonishing.  They are sort of a convenient wood-burning pit.  Which, is probably the best way to get extremely good barbecue.

The barbecue brisket recipe will need the following ingredients:

o 1 ( 5- pound) brisket

o 1 tsp. salt

o ½ tsp black pepper

o ½ tsp paprika

o 1 onion, chopped

o 2 stalks celery, chopped

o 4 cloves garlic, minced

o 1 cup chili sauce

o 1 cup water

o ¼ cup fresh parsley, chopped

o 1 (10 oz) bottle of beer

o fresh parsley

Procedure of Cooking:

o Preheat the oven to 325 ºF

o Wash and dry the brisket, cut away the visible fat.

o Season brisket with salt, pepper, and paprika, and then mix thoroughly for even distribution

o Place the brisket, fat side up, in a heavy baking pan. Surround with onions, celery, and garlic.

o Pour chili sauce on top of the brisket

o Slowly pour the water into the pan around the brisket. Sprinkle with parsley

o Do not cover, and then bake for one hour.

o After 1 hour, remove from the oven and pour beer on the brisket. Do this slowly so as not to wash off the chili sauce.

o Cover the brisket and cook for another 3 hours or until brisket becomes tender.

o Let it cool down in a room temperature, and then place in the refrigerator.

o Remove the accumulated fat on top. Slice and reheat in sauce.

o Garnish with minced parsley sprinkled over the brisket.

This barbecue brisket recipe is good for 10 servings. Each serving contains 35 g of fat, 8.5 g carbohydrates, 167 mg cholesterol, 680 mg sodium, 49 g proteins, and 2 g fiber.
